Magnificent Mediterranean Couscous Salad

(Serves 20-25, easily doubled for a crowd)

Ingredients:

  • 2 cups uncooked couscous

  • 1 (15-oz) can diced tomatoes, undrained

  • 1 (10-oz) package frozen peas, thawed

  • 1 medium cucumber, chopped

  • 1 red bell pepper, chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon dried oregano

Instructions:

  4. Refrigerate for at least 30 minutes before serving.
